The PERFECT Chopped Salad

This chopped salad will be your go-to side dish. Or add protein and make it a complete meal!

Serve this chopped salad any day of the week! Fresh ingredients, packed with veggies, and topped with a protein of your choice. This is on a regular rotation at our house. Customize for whatever toppings you have on hand. Serve as a side or as a full meal!

Key Ingredients

Here’s what you’ll need to make this recipe:

  • Romaine Lettuce

  • Carrots

  • Bell Pepper

  • Cucumber

  • Tomatoes

  • Red Onion

  • Nuts - Almonds, walnuts - your choice!

  • Avocado

  • Optional: Protein - Chicken, Beef, Salmon (omit if vegetarian or vegan)

How to Make

As always, this recipe is simple and easy to make, using whole ingredients. Here’s where to start:

First, chop romaine lettuce, carrots, bell pepper, tomatoes, cucumbers, and red onion. Slice avocado and chop nuts. Add all ingredients to large bowl. Toss to combine.

Next, top with your favorite protein. I typically add grilled chicken - fresh or leftover (both work great!). See my Grilled Chicken Marinade recipe.

Serve with your favorite salad dressing.

How to Serve

Ideas for other toppings include: grilled salmon, beef burger, your favorite cheese (feta, cheddar, blue cheese, etc.), olives, pickled red onions - the options are endless with this chopped salad!

INGREDIENTS

  • 2 heads romaine lettuce, washed and chopped

  • 1 red bell pepper, diced

  • 1/2 cup carrots, diced

  • 1/4 medium red onion, diced

  • 2 small cucumbers, diced

  • 2 small tomatoes, diced

  • 1 avocado, sliced

  • 1/4 cup almonds, sliced

  • Optional: Protein (grilled chicken, salmon, beef) - omit if vegetarian or vegan

INSTRUCTIONS

  1. Chop romaine lettuce, carrots, bell pepper, tomatoes, cucumbers, and red onion.

  2. Slice avocado and chop nuts.
