Here’s what you’ll need to make this recipe:
Avocado Oil - Avocado oil is excellent for grilling due to its high smoke point which allows it to withstand high temps of the grill without breaking down.
Balsamic Vinegar - Brings brightness and sweetness to the marinade.
Mustard - Use dijon for this recipe. The creaminess of the mustard helps bind to the chicken.
Lemon - Adds additional brightness.
Garlic - Start with one clove, but adjust to your liking.
Salt and pepper - Season to taste.
Red Pepper Flakes - Optional, but highly recommended!
How to Make
As always, this recipe is simple and easy to make, using whole ingredients. Here’s where to start:
First, add oil, vinegar, mustard, lemon juice, minced garlic, and seasonings (salt, pepper, red pepper flakes) to a large mixing bowl. Whisk to combine.
Pour over raw chicken (breasts, thighs, drumsticks, wings - your choice!). Store in fridge in a plastic bag or airtight container for at least 30 minutes. For the best flavor, marinate for as long as possible, up to 6 hours.

INGREDIENTS
1 cup avocado oil
1/4 cup balsamic vinegar
1 tablespoon dijon mustard
1 clove garlic, minced
Juice of one lemon
1/4 teaspoon red pepper flakes
Salt and pepper, to taste
INSTRUCTIONS
Add all ingredients to a mixing bowl. Whisk to combine.
Pour over raw chicken, cover, and refrigerate until ready to grill. Marinate at least 30 minutes and up to 6 hours.

NOTES
Marinate for at least 30 minutes and up to 6 hours. I do not recommend marinating overnight because the acidity from the lemon and vinegar will break down the chicken a bit too much.
