  • White Beans - Use your favorite white bean (cannellini, navy, great northern). Either canned or dried. Be sure to allot additional time if using dried beans.

  • Lemon - This recipe uses the zest and juice of one lemon.

  • Olive Oil - Use a high-quality extra virgin olive oil for the best flavor.

  • Garlic - Start with one clove, but adjust to your liking.

  • Vinegar - Use apple cider, red or white wine vinegar for this recipe. To add an additional splash of tanginess!

  • Salt - Season to taste, particularly if your canned beans are unsalted.

  • Red Pepper Flakes - To add the perfect amount of spice. Don’t skip!

How to Make

As always, this recipe is simple and easy to make, using whole ingredients. Here’s where to start:

First, drain and rinse canned beans. Note, if using dried beans, give yourself extra time to soak, boil, and cool beans. I prefer using canned beans as a time saver.

Next, add beans to food processor or blender. Add zest and juice of one lemon, olive oil, garlic clove, vinegar, salt, and red pepper flakes. If adding herbs, also add to the blender. Blend until smooth and creamy. If needed, add one teaspoon of water to ensure fully blended.

Transfer to your favorite serving dish and top with a splash of olive oil and green herbs for garnish.

Store in a sealed container in the fridge for up to 5 days.

INGREDIENTS

  • 3 cups of white beans, canned (cannellini, navy, great northern)

  • 2 tablespoons olive oil

  • Zest of one lemon

  • Juice of one lemon

  • 1 tablespoon apple cider vinegar

  • 1 clove garlic

  • 1/8 teaspoon red pepper flakes

  • 1/4 teaspoon salt

  • 1 teaspoon water, if neeeded

INSTRUCTIONS

  1. Rinse and drain white beans.

  2. Add drained white beans, olive oil, lemon zest, lemon juice, vinegar, garlic, red pepper flakes, and salt to a food processor or blender.

  3. Blend until smooth and creamy. If needed, add 1 teaspoon of water to enhance creaminess.

  4. Transfer to serving dish. Top with a drizzle of olive oil and fresh green herbs for garnish.
