‘Snickers’ Date Bites

In this no-bake recipe, dates provide a caramel-like flavor and a chewy base. Paired with nut butter and a crunchy layer of melted cacao, this sweet treat is refined sugar free!

Packed with fiber from the dates and antioxidants from the cacao, these are a healthier take on a Snickers bar. They take almost no time to make, so you can always have these on hand for an after dinner snack. Medjool dates are naturally VERY sweet so there is no need for added refined sugars in this recipe.

Here’s what you’ll need to make this recipe:

  • Pitted Medjool Dates

  • Nut Butter - Peanut butter, almond butter, cashew butter - choose your favorite! Make sure it is sugar free.

  • Nuts - Peanuts, almonds, walnuts, pecans - any will do!

  • Cacao Baking Chips- Substitute dark chocolate if you prefer. Check for added sugars - you don’t need any for this recipe due to how sweet the dates are.

  • Coconut Oil

  • Salt

How to Make

As always, this recipe is simple and easy to make, using whole ingredients. Here’s where to start:

First, line a baking sheet with parchment paper. Open up each date, remove the pit, and smash using the bottom of a heavy cup. This will make the base of your snickers treat. Spread a dollop of nut butter as the second layer, and top with a a layer of chopped nuts.

Lastly, the chcoloate layer! For this, add cacao baking chips and coconut oil to a small microwavable bowl. Microwave until melted, and stir with a rubber spatula until smooth. Drizzle on top and sprinkle with flaky salt. This will need a few minutes to set. Place the tray in the refrigerator or freezer for 5-10 minutes for the chocolate to fully set. You will be tempted to eat one of these right away, but trust me, wait until the chocolate layer is fully set for the full experience!

I like to store these in the refrigerator and serve cold.

  • 12 medjool dates

  • 1/4 cup nuts, chopped (peanuts, almonds, walnuts, or pecans)

  • 1 tablespoon coconut oil

  • Salt

INSTRUCTIONS
